Land that had to be invented.

Polder Grand Casino Hotel is a fictional destination on a Dutch polder—flat, geometric, impossibly green land that was open water within living memory, pumped dry and held that way by dykes, canals and a station that never stops. The sea is higher than the breakfast room. Pale concrete, dark water and reed green run through the whole casino hotel, which is built inside the old pumping works themselves.

Cycle the dead-straight dyke roads at dawn. Watch the pumps turn over at noon, still doing the one job that keeps the whole place dry. Then step into our adults-only casino salon in the old engine hall, below a water level you can see through the window. Everything about this casino hotel depends on machinery that has to keep working, and that is the quiet thrill of the place.

Gemaal Restaurant

Flat-country cooking, done well.

Our signature restaurant sits in the old boiler house and cooks the produce of the polder around it—dairy from the dyke farms, eel and pike-perch from the canals, winter vegetables from the black polder soil, and cheese aged in the cellar below the pumps. Bread is baked twice a day, the coffee is strong, and the tall windows look out along a canal that is higher than the floor, a few steps from the casino hotel lobby.
